I’ve seen a lot of Facebook posts over the last few days requesting favorite recipes so families can meal plan with new ideas. I love that – there are so many delicious options out there and some of my favorite meals have come from friends! I’ve been in the thick of meal planning myself, especially because I’ve been trying to freeze meals for my family while I’m in China. So I thought I’d share one of our go-to’s that everyone (all 4 children) eats happily! It’s not a freezer meal, but it’s so easy to make and it throws together with about 10 minutes of prep. It’s a healthier version of the Hellman’s Mayo Chicken and only requires FOUR ingredients. It’s a good one to experiment with different flavors too, though it’s great as-is. I make this meal often when I need to get something together quickly.
Ingredients
- 2 pounds of boneless, skinless chicken breasts, trimmed
- 2 cups plain Greek yogurt
- 1 cup Parmesan cheese
- Panko breadcrumbs (for topping)
- Italian Seasoning (for topping)
Instructions
- Preheat oven to 350 degrees.
- Grease a 9x13 glass pan.
- Place chicken breasts in the bottom of the pan.
- In a separate bowl, mix together the Greek yogurt and Parmesan cheese.
- Spread the mixture on top of the chicken, and then top with a sprinkling of breadcrumbs and Italian seasoning.
- Bake for 25-30 minutes or until chicken is done.
- Serve immediately with a veggie of your choice. We like steamed broccoli but anything you have available will work. This meal pulls together so quickly because it has so little prep time. I cook the veggies and prepare the dinner table while the chicken is in the oven, so we're ready to eat as soon as it's done!
