We’ve had quite an abundance of eggs over the last week while on spring break. I usually sell a few dozen to families at our co-op, but the girls have been super productive and piling up our stash. Look at that beautiful collection of healthy, organic, free-ranged eggs! Yum! With the 13 girls in our flock, we’re averaging 10-11 eggs a day, so we have plenty to cook up.
I usually make a version of my Daddy’s quiche recipe about once a week for a nutritious meal using up some of the eggs, but I’m scouting out more delicious alternatives. They’re a perfect protein and we always have them on hand! We love quiche, but variety is always nice. I’d love to hear your favorite dinner egg recipes, please shoot them my way!
