I’ve been married to my high school sweetheart since 2003. Together, we have four amazing children, by birth and adoption. When I am not teaching fine arts to my favorite upper school students at our incredible classical Christian school, I spend my days on our 7-acre property where I try my best to love my family well and experiment with hobby homesteading. My favorite things to do are cultivate my ever-expanding gardens, wrangle chickens, ferment all the things, sourdough bake with einkorn flour, and figure out new ways to use essential oils. I believe God has tasked us to be good stewards of our spaces in the world, and I guide my children to do the same.


I am a board member of The Sparrow Fund and an Empowered to Connect Facilitator. I love to dig in the dirt, cook nourishing food, capture beauty through my camera lens, watch the sunrise on the beach, and spend time with good literature on my porch while sipping on a hot cup of coffee.

Wonton Soup

With Chinese New Year/Spring Festival coming up soon, this is the first of several posts celebrating Sunshine’s Chinese heritage. I am trying to expand my knowledge of making traditional Chinese food. Yesterday, I attempted Wonton Soup. Although all of our wontons eventually fell apart and the fillings came out, the soup itself was quite tasty. Everyone else thought so too, as it was totally gone by the end of the night (I made it for a soup tasting party). Angel had several helpings, and I got a thumbs up from Sweetie (although I don’t think she would have the heart to tell me she didn’t like it anyway). I have leftover frozen meat filling and am challenging myself to try it again now that I have researched wonton folding. I combined a couple recipes to get what I was looking for in this soup, and I have included what I did below. Don’t use our example of wonton folding if you want to cook this soup, ha!  Check youtube for some tutorials.
