Faith over fear.

Ephesians 2:8-10

I’ve been married to my high school sweetheart since 2003. Together, we have four amazing children, by birth and adoption. When I am not homeschooling my favorite students, I spend my days on our 7-acre property where I try my best to love my family well and experiment with hobby homesteading. My favorite things to do are cultivate my ever-expanding gardens, wrangle chickens, ferment all the things, sourdough bake with einkorn flour, and figure out new ways to use herbs and essential oils. I believe God has tasked us to be good stewards of our spaces in the world, and I guide my children to do the same.

I am a board member of The Sparrow Fund and an Empowered to Connect Facilitator. I love to dig in the dirt, cook nourishing food, capture beauty through my camera lens, watch the sunrise on the beach, and spend time with good literature on my porch while sipping on a hot cup of coffee.

What are essential oils?

ESSENTIAL OILS are the aromatic liquids found within plants – shrubs, trees, flowers, bushes, resins, roots, and seeds.  They are the most highly concentrated component of the life blood of plants and often considered nature’s living energy.  Primarily extracted through careful steam distillation, but also through cold pressing, the purest oils are far more powerful...

It makes life so much easier when I’m not home at the time I’d normally be making dinner. We still...

Traditional Fats for a Healthy Lifestyle

In this past week’s IIN health coaching module, I listened to a lecture arguing the case for traditional fats.  This really spoke to me, because eating traditional foods is part of the lifestyle changes I’ve adopted, which have empowered me to get healthy and drop over 30 pounds.  And I’ve made these changes without counting...

“Dump” Slow Cooker Buffalo Chicken Chili

If you ask me, fall is the season of soups.  But then again, so is winter, spring … and, well, summer too.  Ha!  This Buffalo Chicken Chili is one that I definitely make year round.  Not only is it incredibly easy, everyone smiles and exclaims a resounding, “YES!” when they find out that it’s for...

Einkorn Cornbread

Nothing says fall like football, chili, and cornbread!  Even though it still feels a little humid outside here, I’m bringing out all the fall decor and cooking.  On Sunday, we had football on the TV, chili going on the stove, and this delicious cornbread in the oven.  Yay for all the things of fall, even...
